TUNA LOAF

 like to make loafs of everything... meat,chicken turkey but my favorite is tuna. My girls love it and its a mess- free meal, you can accompany this with mashed potatoes or brown rice.

INGREDIENTS

4-5 chopped Asparagus stalks                        1/2 chopped red onion

2 1/2 cups of bell peper any color                 2 cloves of garlic

3 cans of tuna of your preference                  2 stalks of celery

2tbsp of chopped cilantro                             4 eggs or egg whites

2 thin sliced potatoes                                   grated parmesan(optional)

Salt and pepper

Pre-heat oven to 400 F

Saute the garlic,onions and asparragus together then add the bell peppers stir and remove from heat set aside to cool down. In a separate bowl scramble the eggs with salt and pepper once the vegetables are cool add the eggs, tuna, cilantro mix in and set aside. In a9 in casserole add the tuna mixture and pat down arrange the potatoes on top sprinkle the parmesan( optional).

Cover with foil and cook for 40 minutes. Uncover and broil for 5-7 minutes.
